Kale with Peanut Sauce
(from Gluten-free vegan-Thanks Susan O'brien!)
1 large shallot or small onion
1 tablespoon olive oil
8 cups chopped kale
1/2 cup peanut sauce
sea salt
fresh ground pepper
Peanut Sauce
1/4 cup organic peanut butter
1/4 cup hot water
1/8 cup organic brown rice vinegar
1 tablespoon (wheat-free)tamari sauce
1/2 tablespoon agave nectar
1/2 tablespoon molasses
1/2 tablespoon chopped fresh cilantro
pinch of red pepper flakes
In a large sillet saute the shallot in the olive oil over medium-high heat until soft 3-4 minutes; add
kale and cook until crisp/tender about 15 mins;
Wisk together all the sauce ingredients in separate bowl
Pour peaut sauce over the kale mixture; season with salt/peppter
