Arugala and red onion salad with scallops (quick and easy)
Thinly slice red onion and saute to carmelize in a little olive oil and butter.
Add eqaul amounts of cider vinegar and cranberry juice 1/3 &1/3 cups per onion.
At the same time pan sear the sea scallops.
Wash the Arugala
Serve with scallops and onions over the arugula and garnish with dried cranberries
