Recipes we love...
recipe for the Crustless Swiss chard Quiche. It's #311434 on Recipezaar site by
Chef-girl-OV.
1 tsp olive oil
1/2 sweet onion
1/2 bunch swiss chard
2 1/2 cups shredded cheese
4 eggs
1 cup milk
salt and pepper to taste
Preheat oven to 375
Wash and dry chard. Cut off the very ends and roughly chop the rest.
Add onion and chard to pan with oil and saute until stems are tender (do not
overcook). Add salt and pepper to taste.
Grate cheese. (We used Cabot extra sharp and cut back on the amount - used about
1-1 1/2 cups) You can use swiss, gruyere, cheddar, smoked gouda, anything that
sounds interesting.
Whisk eggs. add milk and cheese. fold in onion, chard mixture.
Pour into pie plate coated with cooking spray.
Bake for 35-45 minutes or until golden brown and no liquid seeps when you poke
with a knife.
You can also add some ham or cooked bacon also. Serve with a nice crusty bread
and you're good to go. Makes 8 servings.
