Garlic Scape Pesto
Scapes are milder than garlic yet provide a nice flacor and
texture alternative to the classic basil. Try it with different
nuts too!
1/2 lb of garlic scapes (12-14)
2/3 cup of fresh grated Parmesan cheese
1/3 cup pine nuts
1 cup extra virgin olive oil
juice of 1/2 a lemon
sea salt
Rinse scapes well in cold water and pat dry. Cut into 2-4 inch
pieces and place in food processor.
Add cheese and nuts and chop until coarse.
With processor running slowly pour in the oil, lemon and blend
until smooth.
Salt to taste.
