Summer Squash Medley submitted by Jack & Linda Robillard
Ingredients: 2 large tomatoes (chopped)
2 tbsp sugar
½ onion (chopped)
2 yellow squash (sliced)
2 zucchinis (sliced)
1 tbsp canola oil
basil
1 cup grated cheddar cheese
Put chopped tomatoes in a bowl and sprinkle with 2 tbsp sugar.
Set aside.
Sauté onion in 1 tbsp of canola oil. Add sliced yellow squash
and zucchini. Sprinkle with basil and cook until tender.
Remove pan from heat. Add tomatoes and 1 cup of grated
cheddar.
Mix together and serve.
