Recipes we love...
Chile Verde~ from cooks.com
2 lbs of pork cubed (I used ribs)
15 to 20 Tomatillos- remove husks
2 green chiles
olive oil
clove of garlic minced or garlic powder to taste
1 tablespoon cumin
small onion or tsp onion powder
salt & pepper to taste
Fry pork/ribs to brown add salt, pepper 1/2 cumin
in separate pan boil tomatillos, peppers & onion (if using powder add later)
until easily pierced with a fork.
drain and puree in a food processor (add powdered spices if using)
add remaining cumin and add mix to the pork and cook in the oven
at 300 for 4-5 hrs
At the end the meat will fall off the ribs and shred easily.
Bonus if you are a winter share member the bottle of sauce we gave this
year will heat this up great!
